Sushi Amamoto: A New Chapter for Omakase in Mayfair

Formerly known as TAKU, our restaurant enters a new chapter as Sushi Amamoto. This rebrand marks a clear step forward. New leadership. A renewed focus. The same commitment to precision, restraint, and craft, now guided by one of Asia’s most respected sushi masters.

Sushi Amamoto represents a fresh start for the restaurant. One built on experience, discipline, and ambition. While our foundations remain rooted in Edomae tradition, this new chapter looks ahead. The goal is simple. To push standards higher, introduce new ideas thoughtfully, and aim beyond one Michelin star.

Executive Chef Patron: Shogo Amamoto

At the centre of this new chapter is Executive Chef Patron Shogo Amamoto.

Born in Fukuoka Prefecture, Japan, Chef Amamoto began his sushi apprenticeship at the age of 15. His early training instilled a deep respect for discipline and repetition, values that continue to define his work today. By his early twenties, his skill led him overseas to Taiwan, where he would spend more than a decade refining his craft and building his reputation.

In 2015, he opened Sushi Amamoto in Taipei’s Da’an District. With just 12 seats at a cypress wood counter, the restaurant became one of Asia’s most sought after omakase experiences. In 2019, it was awarded two Michelin stars on its first appearance in the Michelin Guide. The restaurant retained those two stars for three consecutive years.

Chef Amamoto’s philosophy is precise and uncompromising. Each piece of nigiri is treated as a complete dish. Fish is sourced primarily from Kyushu and Tokyo. Rice is prepared using natural spring water from Nagano Prefecture. Balance, temperature, and timing are considered at every stage, from preparation to the moment the sushi is placed in front of the guest.

This approach has since expanded across Taipei through additional restaurants, each expressing the same philosophy in different forms while maintaining strict standards.

Leadership at the Counter

While Chef Amamoto oversees the restaurant’s culinary direction, Sushi Amamoto in Mayfair is led day to day by Head Chef Jongho Park.

Chef Park leads the kitchen and counter service, ensuring consistency and focus across every seating. His role is central to translating Chef Amamoto’s philosophy into daily practice, maintaining clarity, discipline, and attention to detail throughout service.

A Partnership Built on Shared Standards

Sushi Amamoto is the result of a close collaboration between Chef Amamoto, restaurateurs Geoff Leong and Lucas Leong of Leong Enterprises, and Chef Jongho Park.

This partnership is built on shared values. Respect for Edomae tradition. A belief in structure and consistency. And the understanding that progress comes from refinement, not shortcuts. With clear leadership at the counter and long term vision guiding the restaurant, Sushi Amamoto is positioned to grow with intent.
